Section Ownership: You lead the gardemanger section independently, preparing exquisite cold starters, salads, creative carpaccios, tartares, terrines, and sophisticated canapés to the highest standard (16 GaultMillau points). Flawless Mise en Place: You organise your section with structure, precision, and a sharp eye for detail – from handling delicate raw produce and fresh herbs through to the final, immaculate presentation at the pass during service.
Creative Input: You actively contribute your own ideas for seasonal cold dishes, plating concepts, and innovative culinary techniques to the kitchen brigade. Quality & Efficiency: You ensure a smooth service flow at the cold station and maintain exemplary hygiene, cold-chain, and HACCP standards at all times. Team Spirit & Mentorship: You provide inspiring leadership to Commis de Cuisine and apprentices on your section, fostering a respectful and encouraging work environment.
