TLNT1_CH Your main tasks Food Preparation Production Prepare all sauces, jus, reductions, stocks, fonds, and hot kitchen preparations. Produce high-quality sauces according to recipes and culinary standards. Prepare meat, poultry, fish, and seafood components as assigned. Assist with preparation of daily specials and seasonal menus. Ensure all mise en place is completed before service. Follow standardized recipes, portion sizes, and presentation guidelines. Maintain consistency, flavor balance, and quality during service. Ensure dishes leaving the section meet restaurant standards. Support other kitchen sections when required. Maintain correct preparation methods for classical and modern sauces. Control consistency, seasoning, texture, and presentation of sauces. Ensure proper coordination of sauces with meat, fish, and main course items. Assist with menu development and recipe improvements when requested. Organize and maintain the Saucier station during service. Ensure all sauces, garnishes, and components are available throughout service. Coordinate timing with grill, meat, fish, and other hot kitchen sections. Monitor stock levels and communicate shortages promptly. Keep the Saucier station clean, organized, and operational. Clean saucepans, cooking equipment, utensils, and work surfaces after use. Ensure compliance with daily and weekly cleaning schedules. Maintain cleanliness of stove, ovens, and hot kitchen equipment. Report faulty equipment or maintenance issues immediately. Maintain a safe working environment. Your profile Culinary diploma or equivalent professional training. Previous experience as Chef de Partie Saucier, Hot Kitchen Chef, or equivalent role. Strong knowledge of classical and modern sauce techniques. Experience with meat, poultry, fish, and hot kitchen production. Good understanding of HACCP and food safety regulations. Knowledge of FIFO inventory management. Ability to work efficiently under pressure. Strong organizational and teamwork skills. Deliver consistent, high-quality sauces and hot kitchen components. Maintain excellent flavor, texture, and presentation standards. Maintain full compliance with HACCP and hygiene standards. Follow FIFO procedures accurately. Ensure efficient preparation and service execution. Minimize food waste through effective production planning. Maintain a clean, organized, and safe workstation.
