ROLE DESCRIPTION
- As a Development Chef, you will be part of the Viking River F&B team, contributing to the continuous evolution of Viking’s culinary offerings to ensure the highest guest satisfaction through top food quality and consistency.
- Your main goal will be to develop a contemporary, appealing, and operationally feasible culinary menu that enhances the guest experience. You will engage in research and development activities such as recipe creation, product tastings, evaluations, and equipment assessments, utilizing a dedicated development kitchen.
- You will regularly visit our vessels to understand onboard operations, engage with operational teams, and gather guest feedback. Your projects will involve collaboration with various industry stakeholders.
- You will report to the F&B Director River and work closely with the Sr. Corporate Executive Chef, purchasing team, industry partners, and the Viking Ocean culinary team to share best practices and align culinary offerings.
- This is a full-time position based in Grenzach, Germany, with travel up to 30% depending on assignments.
RESPONSIBILITIES
- Develop new recipes and dishes aligned with Viking’s culinary strategy.
- Plan and organize tastings to review new recipes and presentations.
- Monitor culinary trends and innovations, reporting relevant findings.
- Support the purchasing team in product tastings and evaluations.
- Collaborate with Industry Partners on recipe development and review.
- Oversee testing and evaluation of new galley equipment.
- Create culinary training materials, such as recipe videos and dish photos.
- Contribute to innovation within the F&B team.
- Coordinate events, workshops, and tastings in the development kitchen.
- Assist with specific projects or assignments as needed.
- Manage and maintain the development kitchen, ensuring regulatory compliance and budget adherence.
- Document activities and report on achievements regularly.
- Support culinary operations of the company restaurant temporarily if required.

- Proficiency in Word, Excel, Outlook, and PowerPoint.
- Willingness to travel and work outside regular hours if needed.
